Quesadillas on Fresh Corn Tortillas

Quesadillas on Fresh Corn Tortillas

Real corn tortilla quesadillas hit different — lighter, more flavorful, and with a deeper corn taste than flour versions. When you use fresh corn tortillas and good melting cheese, you get crisp edges, a soft center, and clean, simple flavor.

Perfect for a fast lunch, snack, or add-on plate.

Ingredients

  • Fresh 6" corn tortillas

  • Oaxaca, mozzarella, or Chihuahua cheese

  • Optional: mushrooms, squash blossoms, chicken, or beans

Steps

  1. Heat a skillet over medium heat.

  2. Warm the tortilla first so it’s flexible.

  3. Add cheese and any fillings.

  4. Fold in half and cook until melted and lightly crisp on both sides.

Tip: Medium-low heat melts the cheese fully without burning the tortilla.
